Skinny pasta, gluten free pasta, no carb pasta, need I say more?
Ever since I decided to cut down on my wheat and gluten content which I believe isn't great for you, I have had to re-invent recipes in order to suit my new life style and fingers crossed shrinking waist line. The shocking thing I found is that I prefer these recipes and the even more bizarre finding is that my husband loves them also. 
This recipe is super simple and easy above all, it is also vegetarian.

Using this little beauty which I picked up in DAVID JONES but you can find it everywhere on line, make ribbons of zucchini / courgette. This takes all of 30 seconds. I used 2 medium zucchinis but use 3 if you are making for 2 people.  

- 1 clove of garlic 
- 2 table spoons of oil
- Large handful of cherry tomatoes

Chop or crush the garlic and combine with olive oil. 
Half the sexy little tomatoes, place onto baking tray then cover with garlic oil prepared earlier.
Sprinkle with salt and pepper and put into hot over set at 180c for 15 minutes.
Once done set aside to cool slightly.

- 1 table spoon of honey
- 2 table spoons of oil
- Juice of 1 lemon

Combine ingredients in a dish, mix well.

- 1 handful of feta

Combine the gem green ribbons of zucchini with the handful of torn up zingy feta, toss and add tomatoes followed by the honey, oil and lemon mix.

What a skinny, sexy little recipe.
